While we’re on the subject of coffee snobbery, anyone know how to get cafe-quality microfoam at home without dropping $500 on equipment? I wanna pour me some latte demon spawns.

    I have a Rancillio Silvia which produces pretty decent microfoam. I got it used on craigslist for $300. You can turn out some solid espresso with it too, especially if you spring for a couple of mods, and a decent grinder.

      Have you added a PID? It’s totally worth it, not particularly difficult either.

        I have the Silva with the PID, and a $400 grinder, and I get somewhat decent coffee if I get just the right roast… for about 5 days. Then pretty quickly the coffee really doesn’t work in the Silva anymore. My 2 ounce shots go through too quickly and its over.

        My advice for anyone wanting to learning home espresso making: don’t do it. You’ll spend a fuck ton of money ($500 hardly gets you started), and will make at least one sink shot (a shot you throw in the sink) for every decent shot. And if you spend less than the minimum $1k startup costs, every single piece of equipment you buy that first round will be replaced by something better once you learn. So you’ll think you’re saving money but you’re just wasting more.

        And then you’ll go to a place like 4 Barrel and realize you still have no clue what you’re doing.

        And then you’ll watch someone pull an espresso wit horrible technique (wrong tamp pressure, over extracted) and it’ll *still* taste 20x better than what you make with all your fussing.

    Keep your eye out for a Starbucks Barista machine– really a Saeco– and for Brevilles. They sold a lot of those machines and they pop up for cheap on Craigslist all the time, people did the math about how much their precious espresso drinks cost them compared to getting a machine, but they didn’t realize the time+skill needed to make a good shot, plus you need a good grinder as well. You should spend more on a grinder ($150 and up) than a starter espresso machine (under $100, used).
