Hedgehog for dinner

Looks like it’ll be an option at this forthcoming new place Central Kitchen. Eater SF has the scoop:

There were eight people at the first preview dinner at the dough room of Flour + Water. Executive Chef Tom McNaughton and Chef D’Cuisine Michael Gaines served eight official courses with various amuses peppered in. The focus of the new restaurant is Northern California – whatever that means at any given time. They are hyper-focused on seasonality and sourcing local. Many of the ingredients came from the rooftop garden or very close by.

Standout dishes were:

Hedgehog. Egg yolk. Brioche. Horseradish: At first the circulated egg seemed a little dense but then it melted into the other ingredients and the whole thing came together.

Yeah, I can see that. I think I’d like a little egg yolk in my hedgehog. (I could maybe also go for a super hedgehog burrito.) Read on.

Salumeria preview tonight at Shotwell’s

Salumeria, again, is a forthcoming new venture from the folks what brought us Flour + Water.

Get hyped on Thomas McNaughton’s Salumeria with TWO pop-ups this week

I don’t know about you, but we’re pretty confident the Flour + Water chef can put together some bangin’ Italian sandwiches, and now’s your time to find out. The first takes place Wednesday 11:30-2:30 at McNaughton’s Flour + Water (pictured.) If you have a job (or don’t go east of South Van Ness,) there is a second pop-up planned at Clooney’s on 26th and Valencia on Friday evening.

The following sandwich is on the menu: prosciutto cotto, mortadella, pepperoncinis, whole grain mustard, olive tapenade, pickled carrot, wagon wheel cheese, foccacia- $10. Sweet.

Rock icon Bob Mould to DJ tonight at Flour and Water

The press release doesn’t explain how exactly this relationship came about, but for some reason Bob Mould has begun DJing regularly at Flour and Water. Here’s the skinny:

Music begins at 5.30pm and will extend throughout the entire evening; Mould will join flour + water in celebration at 9pm.  Come and meet the artist!

Bob Mould DJ nights are the first in a series of artist DJ collaborations at flour + water.  We have teamed up with NoisePop to bring these exciting DJ nights to you.  These evenings are sought to deliver what flour + water does best: pasta, wine and loud music.  From Mould’s play list on May 2, look to enjoy a little Ringo DeathStarr, Dum Dum Girls, No Age and Foo Fighters…just to name a few.

No Age AND Foo Fighters?? I thought you had to choose one or the other. I guess Bob Mould knows best.

Mission restaurant employees are the hottest

Eater SF this morning published a list of the 15 Bay Area restaurants with the hottest staffs. The top two are in the Mission. Here’s what they have to say:

2) Heart: Brooding owner Jeff Segal chose a pulsating organ as the logo for his Mission wine bar; he serves wine in Mason jars and describes them with guts. “More soul than Marvin Gaye. This wine just fucking sings,” for example. Add in louche hipster servers and this wild card is not only steaming up the wine scene, but twisting it into bendy new positions.

1) Flour + Water: There’s a beau in the back and the servers can wear whatever they fancy. Our reader favorite is a swarm of plaid-clad, hottie hospitality.
