are you under the impression that there are no chefs in mexico? do you really think that cheap street food is the only form of authentic mexican food?
What’s the issue here? What makes their tacos fusion? I’ve been to the restaurant a few times now, the food is pretty spot on. I mean, I get that they’re a clean and even pretty restaurant, but are you suggesting that that makes them any less “authentic”?
It’s a strange statement you make: that a chef of a certain ethnicity should only cook within they’re culture. Wouldn’t that make the world a pretty mono-chromatic place?
